Traditional Irish Boxty

The Boxty is Irish, Celtic and easy to make.

This is the recipe used by Niall's grandmother, which she assures him has been passed down for many generations of his family:

  • 1.5 cups grated potatoes
  • 1 cup flour
  • 1 cup leftover mash
  • wee bit of milk
  • olive oil to your desired consistency – about a ¼ cup
  • 1 or 2 eggs

Mash it up to a griddle cake, cook it to a golden brown.

If you happen to be in Dublin, we recommend you try the Boxty at Gallagher’s Boxty House in Dublin’s popular Temple Bar. When I'm is in town, I like to call by. The menu at this white table cloth establishment gives credit to the traditional Irish Boxty.
